FOOD AS AN ACT OF CARE ft. Libri nei Vicoli del Borgo

After studying philosophy, Chiara Pavan chose cooking as a space for research and expression. Today, on the island of Mazzorbo in the Venetian Lagoon, she leads a restaurant awarded both a Michelin star and a Michelin Green Star for sustainability. Chiara’s is an “environmental cuisine”: an approach guided by local ingredients, aimed at enhancing wild herbs and invasive species, imagining new uses for food waste, and reinventing tradition. It is a cuisine that questions the present and seeks to imagine the food of the near future.
